PASTA WITH AVOCADO AND BASIL PESTO

This tasty recipe is easy, requires only few simple ingredients and will be ready in about 20 minutes.

Servings: 4 people

Ingredients:

  • 400 g (4 cups) pasta fusilli
  • 1 ripe avocado, chopped
  • 1 bunch of fresh basil
  • ½ lemon juice
  • olive oil
  • grounded pepper
  • grated cheese

Directions:

  • Place the avocado, basil and pepper into a blender and mix. Blend while pouring in the oil (about 2 tablespoons) and the lemon juice until you have a cream.
  • Check the consistency and add a little water if needed. The cream should be smooth.
  • Cook the pasta in a pot without adding salt.
  • Once cooked, drain the pasta and mix it with the avocado and basil pesto.
  • Add some grated cheese as you like (optional) and serve.
