MINI SALMON BALLS

These Baked Salmon Balls are delicious and are jam-packed full of Omega 3


Preparation Time: 00:40   Cook Time: 00:20    Total Time: 01:00 

Servings: 15 balls

Ingredients:

  • 500 g (17 oz) salmon fillet
  • 450 g (2 1/2 cups) potatoes, peeled and halved
  • 1 egg, lightly beaten
  • 1 fresh spring onion, finely chopped
  • fresh dill
  • 1 tbsp fresh chives, finely chopped
  • 4 tbsp breadcrumbs
  • black pepper

Directions:

  • Boil the potatoes in water for 25-30 minutes until tender.
  • Drain and mash the potatoes using a potato masher.
  • Immerse the salmon in a pot of boiling water and cook for about 10 minutes until it is well cooked inside.
  • Remove it from the pot and remove the skin and any bone.
  • Chop the salmon with a knife.
  • Put the salmon in a bowl, add the mashed potatoes, pepper and spring onion.
  • Then add chives, dill, egg and a tablespoon of breadcrumbs and mix well.
  • Using your hands shape the mixture into balls and roll each ball in breadcrumbs.
  • Drizzle a little olive oil over the balls and bake them in the oven at 180°C/350°F/gas 4 for about 20 minutes until golden.
